  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can cannellini beans, drained and rinsed

  • 4 cups chicken or vegetable broth
  • 1 cup small pasta (ditalini or elbow)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion, carrots, and celery, and cook until vegetables are soft, about 5 minutes.
  2. Add minced garlic and cook for 1 minute.
  3. Stir in beans, tomatoes, broth, oregano, basil, salt, and pepper. Bring to a boil.
