- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan
- 2 cloves garlic, minced
- 1 large egg
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken or veggie broth
- 1 can (14 oz) crushed tomatoes
- 1 teaspoon Italian seasoning
- Fresh basil for garnish
Instructions
- Preheat oven to 400°F (200°C). Mix ground beef, breadcrumbs, Parmesan, garlic, egg, salt, and pepper. Form into small meatballs and bake for 15 minutes.
- In a large pot, heat olive oil over medium heat. Sauté onion, carrots, and celery until softened.
- Add broth, crushed tomatoes, Italian seasoning, and bring to a boil.
- Reduce heat and add baked meatballs. Simmer for 20 minutes.
- Garnish with fresh basil and serve hot.
Notes
- You can substitute ground turkey for beef for a leaner option.
- Simmer longer for more flavor.
