Ingredients

  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan
  • 2 cloves garlic, minced
  • 1 large egg
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken or veggie broth
  • 1 can (14 oz) crushed tomatoes
  • 1 teaspoon Italian seasoning
  • Fresh basil for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Mix ground beef, breadcrumbs, Parmesan, garlic, egg, salt, and pepper. Form into small meatballs and bake for 15 minutes.
  2. In a large pot, heat olive oil over medium heat. Sauté onion, carrots, and celery until softened.
  3. Add broth, crushed tomatoes, Italian seasoning, and bring to a boil.
  4. Reduce heat and add baked meatballs. Simmer for 20 minutes.
  5. Garnish with fresh basil and serve hot.
