Ingredients
Scale
- 4 large onions, thinly sliced
- 3 tablespoons butter
- 1 tablespoon olive oil
- 4 cups beef broth
- 1 teaspoon thyme
- Salt and pepper to taste
- French baguette, sliced
- 1 1/2 cups grated Gruyere cheese
Instructions
- In a large pot, melt butter and olive oil over medium heat. Add onions and cook slowly, stirring frequently, until caramelized, about 30-40 minutes.
- Stir in thyme, salt, and pepper. Add beef broth and bring to a simmer. Adjust seasoning as needed.
- Toast baguette slices until golden brown. Ladle soup into oven-safe bowls, top each with baguette slices, then sprinkle generously with Gruyere cheese.
- Place bowls under the broiler until cheese is melted and bubbly, about 3-5 minutes. Serve hot, garnished with thyme if desired.
Notes
- Ensure onions are caramelized slowly for deep flavor.
- Use a good quality beef broth for richer taste.
- Broil just until cheese is bubbly to avoid burning.
