These crispy, savory corn slices are a trendy and fun way to enjoy fresh corn cobs with smoky spices, making them a crowd-pleasing addition to any outdoor gathering or BBQ. Easy to prepare and customizable with various seasonings and toppings, Corn Ribs bring the flavors of summer right to your plate.

  • Total Time: 20-25 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 4 large fresh corn on the cob
  • 2 tablespoons olive oil or vegan butter
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon chili powder
  • Salt and black pepper to taste
  • Optional toppings: chopped herbs, grated cheese, or vegan cheese

Instructions

  1. Start with fresh, large corn on the cob, husk removed, and silk cleaned. Cut each cob into thirds lengthwise to create rib-shaped pieces.
  2. In a small bowl, mix together olive oil or melted vegan butter with smoked paprika, garlic powder, chili powder, salt, and pepper. Brush each corn rib generously with the seasoning mixture.
  3. Preheat your air fryer to 375°F (190°C). Place the seasoned corn ribs in a single layer and cook for 10-15 minutes, turning halfway through until crispy and golden.
  4. Alternatively, preheat your grill to medium-high heat. Grill the corn ribs for about 12-15 minutes, turning occasionally, until charred and crispy.

Notes

  • For extra flavor, add fresh herbs or spicy sauce before serving.
  • Keep in an airtight container in the refrigerator for up to 2 days.
  • Reheat in the air fryer at 350°F (175°C) for 3-5 minutes or on the grill for a few minutes to restore crispiness.
