- 4 small flour or crispy taco-sized tortillas
- ½ cup refried beans (optional)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese

- ¼ cup sliced black olives
- 1 small red onion, diced
- Fresh cilantro, chopped
- Jalapeños for extra spice (optional)
- Sour cream and salsa for serving
Instructions
- In a skillet over medium heat, add the ground beef (or turkey) and cook until browned. Drain excess fat, then add the taco seasoning along with a splash of water. Simmer until thickened and flavorful.
- Preheat your oven to 400°F (200°C). If using crispy tortillas, lightly brush with oil and bake for 5 minutes to crisp them up. For softer bases, warm in microwave briefly.
- Lay your first tortilla on a baking sheet. Spread refried beans if desired, then evenly distribute the cooked seasoned meat. Sprinkle a mix of cheddar and Monterey Jack cheese on top.
- Add diced tomatoes, black olives, red onions, and jalapeños. Bake in the oven for 10-12 minutes until cheese is melted and bubbly.
