- 1 lb beef stew meat, cubed
- 3 carrots, diced
- 2 celery stalks, sliced
- 2 potatoes, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup green beans, chopped
- 1 cup canned diced tomatoes
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add beef cubes and brown on all sides; remove and set aside.
- In the same pot, sauté onion, carrots, celery, and garlic until fragrant and vegetables are slightly tender.
- Return beef to the pot. Add beef broth, potatoes, diced tomatoes, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 1.5 hours until beef is tender and flavors meld.
- Add green beans and cook for another 10 minutes. Garnish with fresh parsley before serving.

- For richer flavor, use beef bones to make homemade broth.
- Feel free to add other vegetables like peas or corn.
