Ingredients

  • 1 lb beef stew meat, cubed
  • 3 carrots, diced
  • 2 celery stalks, sliced
  • 2 potatoes, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup green beans, chopped
  • 1 cup canned diced tomatoes
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add beef cubes and brown on all sides; remove and set aside.
  2. In the same pot, sauté onion, carrots, celery, and garlic until fragrant and vegetables are slightly tender.
  3. Return beef to the pot. Add beef broth, potatoes, diced tomatoes, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 1.5 hours until beef is tender and flavors meld.
  5. Add green beans and cook for another 10 minutes. Garnish with fresh parsley before serving.
