- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 tbsp tomato paste
- 1 cup beef or vegetable broth
- 2 tbsp Worcestershire sauce
- 1 tsp dried thyme
- Salt and pepper to taste
- 4 cups mashed potatoes (prepared in advance)
- 2 tbsp butter (for mashed potatoes)
- Optional: shredded cheese or fresh herbs for garnish
Instructions
- In a large skillet, brown the ground beef or lamb over medium heat until fully cooked. Drain excess fat, then add chopped onions and minced garlic. Cook until the onions become translucent.
- Stir in tomato paste, mixed vegetables, Worcestershire sauce, thyme, salt, and pepper. Pour in beef broth and simmer for about 10 minutes to meld flavors.
- Preheat your oven to 375°F (190°C). Spread the meat filling evenly in a baking dish. Top with prepared mashed potatoes, spreading smoothly over the filling. Add shredded cheese or herbs if desired.
- Bake in the preheated oven for 20-25 minutes, or until the top is golden brown. Let it rest for a few minutes before serving.
Notes
- Use ground turkey or chicken for a leaner variation.
- Vegetarian version: replace meat with lentils or mushrooms, and use vegetable broth.
- For best results, prepare mashed potatoes in advance and refrigerate until needed.
