Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan with butter or non-stick spray, and line with parchment paper.
- In a large bowl, mix melted butter and light brown sugar until smooth. Beat in eggs one at a time, then add vanilla extract, mixing thoroughly.
- In a separate bowl, whisk together flour, baking powder, ground cinnamon, and salt. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Do not overmix.
- Pour the batter into the prepared pan and spread evenly. In a small bowl, combine granulated sugar and ground cinnamon for the topping. Sprinkle this evenly over the batter.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool completely before slicing into bars.
