Instructions
- In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, and salt until well combined.
- Using a pastry cutter or your fingers, cut in the cold butter until the mixture resembles coarse crumbs.
- Gently fold in the chocolate chips ensuring even distribution throughout the dry ingredients.
- Whisk together the heavy cream and vanilla extract in a separate bowl. Pour into the dry ingredients and mix just until combined.
- Turn the dough onto a floured surface, knead lightly, then shape into a 1-inch thick circle. Cut into 8 wedges or use a biscuit cutter for rounds.
- Place the scones on a parchment-lined baking sheet. Brush the tops with a little extra heavy cream and sprinkle with coarse sugar if desired.
- Bake at 400°F (200°C) for 15-20 minutes until golden brown and crispy.
