Ingredients
Scale
- 3 ripe bananas, mashed
- 1/2 cup granulated sugar
- 1/3 cup melted unsalted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
- In a large bowl, mash the bananas until smooth. Add the sugar, melted butter, eggs, and vanilla extract. Mix well until combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients into the wet mixture, stirring gently until just combined. Do not overmix.
- Fold in the chocolate chips evenly throughout the batter.
- Divide the batter evenly among muffin cups, filling each about 3/4 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool for a few minutes before transferring to a wire rack to cool completely.
Notes
- Use very ripe bananas for enhanced sweetness and moisture.
- Do not overmix the batter to keep muffins light and fluffy.
- You can add nuts or dried fruit for extra texture and flavor.
