Ingredients
Scale
- For Chicken Satay:
- 1 lb (450g) boneless, skinless chicken breasts or thighs, cut into strips
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon honey or brown sugar
- 2 garlic cloves, minced
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- Skewers (wooden or metal)
- For Easy Thai Peanut Sauce:
- Β½ cup creamy peanut butter
- ΒΌ cup coconut milk
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 tablespoon honey or brown sugar
- 1 teaspoon red curry paste (optional for extra spice)
- Chopped peanuts and fresh cilantro for garnish
Instructions
- Marinate the Chicken: In a mixing bowl, combine soy sauce, fish sauce, honey, minced garlic, ground coriander, and cumin. Add the chicken strips and toss to coat evenly. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Preheat the Grill: Heat your grill or grill pan to medium-high heat. Clean the grates to prevent sticking and ensure grill marks.
- Skewer the Chicken: Thread the marinated chicken pieces onto skewers, dividing evenly to prevent overcrowding.
- Cook the Chicken: Place the skewers on the preheated grill. Grill for about 4-5 minutes per side, or until the chicken is cooked through and has a smoky char.
- Rest the Skewers: Remove from the grill and let the chicken rest for a few minutes before serving to retain juiciness.
- Combine Ingredients: In a saucepan, whisk together peanut butter, coconut milk, soy sauce, lime juice, honey, and red curry paste if using.
- Simmer to Perfection: Cook over medium-low heat, stirring constantly until smooth and heated through. Adjust the thickness by adding more coconut milk if necessary.
- Serve: Pour the peanut sauce into a bowl and garnish with chopped peanuts and fresh cilantro for an authentic touch.
Notes
- Use thin chicken breasts or thighs for even grilling and tender results.
- Marinate the chicken for at least 30 minutes, but overnight for maximum flavor.
- Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
- Adjust the spice level of the peanut sauce by increasing or decreasing the curry paste.
