Ingredients
Scale
- 2 cups cooked chicken, shredded or diced
- 1 ripe avocado, sliced or mashed
- 4 slices of whole grain or sourdough bread
- 1 cup shredded cheddar or Monterey Jack cheese
- 1 small red onion, thinly sliced
- 2 tablespoons mayonnaise or Greek yogurt
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Optional: fresh cilantro or parsley for garnish
Instructions
- In a bowl, combine the cooked chicken with mayonnaise or Greek yogurt, lemon juice, salt, and pepper. Mix well to create a flavorful chicken filling.
- Spread mashed or sliced avocado onto one side of each bread slice.
- Layer the chicken mixture on one slice, followed by shredded cheese and sliced red onion.
- Top with the second bread slice, avocado side facing in.
- Heat a skillet over medium heat or use a sandwich press. Cook until the bread is golden brown and cheese is melted, about 3-4 minutes per side, or broil in oven for a crispy finish.
Notes
- Use ripe avocados for maximum creaminess and flavor.
- Choose tender, well-seasoned cooked chicken for best taste.
- Experiment with different cheeses like Swiss, provolone, or mozzarella for variety.
- Grill until golden and cheese is gooey for the perfect melt.
- Add crispy bacon or fresh lettuce for extra crunch and freshness.
