- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 3/4 cups all-purpose flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3 tablespoons ground cinnamon
Instructions
- Preheat oven to 375°F (190°C). In a large bowl, cream together the butter and sugar until fluffy.
- Add eggs one at a time, then vanilla, and mix well.
- In a separate bowl, whisk together flour, cream of tartar, baking soda, salt, and cinnamon.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- In a small bowl, mix remaining sugar with additional cinnamon for coating.
- Shape dough into 1 1/2-inch balls, then roll in cinnamon sugar mixture.
- Place on baking sheets lined with parchment paper, spaced about 2 inches apart.
- Bake for 10-12 minutes until edges are lightly golden.
- Remove from oven, let cool for a few minutes, then transfer to wire racks. Enjoy!

- For extra chewy cookies, do not over-bake.
