Instructions
- Start by soaking the cherries in amaretto. Place the pitted cherries in a bowl, pour over the amaretto, and marinate for at least 30 minutes.
- Cream together mascarpone cheese with half of the sugar and vanilla extract until smooth. Whip the heavy cream with remaining sugar until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture to create a light filling.
- Dip each ladyfinger briefly into the remaining amaretto mixture, ensuring they are moist but not soggy. Arrange a layer at the bottom of your serving dish.
- Spread half of the mascarpone mixture over the ladyfingers, then layer half of the marinated cherries. Repeat with another layer of soaked ladyfingers, mascarpone, and cherries.
- Cover and refrigerate for at least 4 hours or overnight. Before serving, dust with cocoa powder and garnish with chocolate shavings or extra cherries for an elegant presentation.
