  • 4 cups baby potatoes, halved
  • 1 pound smoked sausage, sliced
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and halve the baby potatoes, and slice the smoked sausage into bite-sized pieces.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced smoked sausage and cook until browned, about 5 minutes. Remove from skillet and set aside.
  3. In the same skillet, add the baby potatoes. Season with salt, pepper, and half of the ranch seasoning. Cook for about 10 minutes, stirring occasionally, until the potatoes are tender and golden.
  4. Transfer the cooked potatoes and sausage to a baking dish. Sprinkle the remaining ranch seasoning over the top, then add sour cream and half of the shredded cheddar cheese. Mix gently to combine all flavors.
  5. Sprinkle the remaining cheese on top. Bake in the preheated oven for 15-20 minutes until the cheese is melted and bubbly. Optionally broil for 2 minutes for a crispy top.
