- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 3 cloves garlic, minced
- 1/2 cup breadcrumbs (gluten-free optional)

- 1 teaspoon Italian seasoning
- Salt and freshly ground black pepper to taste
- Optional: 1/2 teaspoon red pepper flakes for spiciness
Instructions
- Preheat your oven to 375°F (190°C). Grease a loaf pan or line with parchment paper.
- In a large bowl, combine ground chicken, mozzarella, parmesan, minced garlic, breadcrumbs, egg, parsley, Italian seasoning, salt, and black pepper. Mix until well incorporated. Add red pepper flakes if desired.
- Transfer the mixture to the prepared loaf pan and press gently into shape. For a rustic look, form on a baking sheet.
- Bake for 45-50 minutes until internal temperature reaches 165°F (74°C). During the last 10 minutes, sprinkle additional cheese on top if desired.
- Remove from oven, let rest for 10 minutes, then slice and serve with your favorite sides.
