  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 cup roasted cashews
  • 2 bell peppers, sliced
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil
  • 1 tsp ginger, grated
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Cut chicken into bite-sized pieces and mince garlic. Slice bell peppers and onion.
  2. Heat 1 tbsp vegetable oil in a wok or skillet over medium-high heat. Stir-fry chicken for 5-6 minutes until golden brown. Remove and set aside.
  3. Add remaining oil to the pan and sauté garlic and ginger for 30 seconds. Add bell peppers and onion, stir-frying for 3-4 minutes.
  4. Return chicken to the pan. Add soy sauce, oyster sauce, honey, and sesame oil, stirring well. Toss in cashews and cook for 1-2 more minutes. Garnish with cilantro if desired.
