Ingredients

  • 2 ripe bananas, mashed
  • 1 cup grated carrots
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, mash bananas. Add eggs, oil, and vanilla, mixing well.
  3. In another bowl, combine flour, sugar, baking soda, cinnamon, and nutmeg.
  4. Add dry ingredients to wet, mixing gently. Fold in grated carrots.
  5. Pour batter into prepared loaf pan and bake for 50-60 minutes, until a toothpick inserted comes out clean.
  6. Allow to cool before slicing and serving.
