- 2 ripe bananas, mashed
- 1 cup grated carrots
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a large bowl, mash bananas. Add eggs, oil, and vanilla, mixing well.
- In another bowl, combine flour, sugar, baking soda, cinnamon, and nutmeg.
- Add dry ingredients to wet, mixing gently. Fold in grated carrots.
- Pour batter into prepared loaf pan and bake for 50-60 minutes, until a toothpick inserted comes out clean.
- Allow to cool before slicing and serving.
Notes
- You can add chopped nuts or raisins for extra texture.
- This bread stores well for 2-3 days in an airtight container.
