Instructions
- Prepare the dough by combining flour and salt in a mixing bowl, creating a well in the center; add eggs and olive oil.
- Knead the dough for about 8-10 minutes until smooth and elastic, then let it rest for 30 minutes.
- Roll out the dough to about 1/16-inch thickness on a floured surface.
- Cut the rolled-out dough into rectangles (about 2ร3 inches) and pinch the ends together to form the caramelle shape.
- Bring salted water to a boil, add caramelle pasta, and cook for 3-5 minutes or until they float. Drain and toss with your chosen sauce.

- Plate your caramelle pasta with freshly chopped herbs and a drizzle of olive oil or Parmesan cheese for an elegant presentation.
