  • Total Time: 30 minutes
  • Yield: 24 cookies

Ingredients

Scale
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 apples, peeled and diced (preferably tart varieties like Granny Smith)
  • 1 cup caramel sauce (store-bought or homemade)
  • For rolling: 1/4 cup granulated sugar mixed with 2 teaspoons ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon. Set aside.
  2. In a stand mixer or with a hand mixer, beat softened butter and sugar until light and fluffy. Add egg and vanilla, blending until smooth.
  3. Gradually add dry ingredients to the wet mixture; mix on low speed. Gently fold in diced apples.
  4. Using a cookie scoop or tablespoon, form dough balls. Roll each in the cinnamon-sugar mixture and place on parchment-lined baking sheets.
  5. Bake for 12-15 minutes until golden edges form. Remove from oven and immediately spoon caramel sauce onto each warm cookie. Cool slightly before serving.

Notes

  • Use tart apples like Granny Smith for best flavor contrast.
  • Add a tablespoon of brown sugar to the dough for extra chewiness.
  • Save some caramel sauce for drizzling on top right before serving for an attractive presentation.
