- For rolling: 1/4 cup granulated sugar mixed with 2 teaspoons ground cinnamon
Instructions
- Preheat oven to 350°F (175°C). In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon. Set aside.
- In a stand mixer or with a hand mixer, beat softened butter and sugar until light and fluffy. Add egg and vanilla, blending until smooth.
- Gradually add dry ingredients to the wet mixture; mix on low speed. Gently fold in diced apples.
- Using a cookie scoop or tablespoon, form dough balls. Roll each in the cinnamon-sugar mixture and place on parchment-lined baking sheets.
- Bake for 12-15 minutes until golden edges form. Remove from oven and immediately spoon caramel sauce onto each warm cookie. Cool slightly before serving.
