Instructions
- Start by seasoning the sliced Cajun chicken breasts with smoked paprika, cayenne pepper, dried thyme, salt, and black pepper. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove from pan and set aside.
- In the same skillet, add the sliced red and green bell peppers. Sauté for about 3-4 minutes until they soften but still retain some crunch. Add minced garlic and cook for another 1 minute to release aromatic flavors.
- Pour in the heavy cream and bring to a gentle simmer. Stir in grated Parmesan cheese, ensuring it melts smoothly into the sauce. Add extra cayenne pepper if you prefer more heat. Cook for 2-3 minutes until the sauce thickens slightly.
- While preparing the sauce, cook the fettuccine in boiling salted water according to package instructions until al dente. Drain and set aside.
- Add the cooked fettuccine to the skillet with the spicy Alfredo sauce. Toss to coat evenly. Return the cooked Cajun chicken to the skillet and give everything a final toss. Garnish with chopped fresh parsley for a vibrant finish.
