Perfect for spice lovers seeking a hearty and indulgent meal, this recipe combines tender Cajun chicken with silky Alfredo sauce and al dente fettuccine for a delicious and satisfying dinner option.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 12 oz fettuccine
  • 2 tbsp olive oil
  • 1 lb Cajun chicken breasts, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tsp smoked paprika
  • 1 tsp cayenne pepper (adjust to taste)
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Start by seasoning the sliced Cajun chicken breasts with smoked paprika, cayenne pepper, dried thyme, salt, and black pepper. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove from pan and set aside.
  2. In the same skillet, add the sliced red and green bell peppers. Sauté for about 3-4 minutes until they soften but still retain some crunch. Add minced garlic and cook for another 1 minute to release aromatic flavors.
  3. Pour in the heavy cream and bring to a gentle simmer. Stir in grated Parmesan cheese, ensuring it melts smoothly into the sauce. Add extra cayenne pepper if you prefer more heat. Cook for 2-3 minutes until the sauce thickens slightly.
  4. While preparing the sauce, cook the fettuccine in boiling salted water according to package instructions until al dente. Drain and set aside.
  5. Add the cooked fettuccine to the skillet with the spicy Alfredo sauce. Toss to coat evenly. Return the cooked Cajun chicken to the skillet and give everything a final toss. Garnish with chopped fresh parsley for a vibrant finish.

Notes

  • Adjust the amount of cayenne pepper for desired spice level.
  • Use gluten-free pasta for a gluten-free version.
  • For a creamier sauce, add a splash of milk or more Parmesan.
  • Leftovers can be stored in an airtight container for up to 2 days and reheated gently.
