  • Total Time: 1 hour
  • Yield: 6 servings

Ingredients

Scale
  • 1 lb ground turkey or lean beef
  • 1 cup finely chopped spinach or kale
  • 1 cup grated carrots
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs (use gluten-free if desired)
  • 2 eggs
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • For the balsamic glaze:
  • 1/2 cup balsamic vinegar
  • 2 tbsp honey or maple syrup
  • 1 tsp Dijon mustard

Instructions

  1. In a large mixing bowl, combine the finely chopped spinach, grated carrots, diced onion, and minced garlic to create the vegetable mixture.
  2. Add the ground turkey or lean beef, breadcrumbs, eggs, dried thyme, paprika, salt, and pepper. Mix thoroughly until well combined.
  3. Shape the mixture into a loaf shape and place it on a baking sheet lined with parchment paper or into a loaf pan.
  4. Bake in preheated oven at 375°F (190°C) for 45-50 minutes until cooked through and golden on top.
  5. While the meatloaf is baking, prepare the balsamic glaze by combining balsamic vinegar, honey, and Dijon mustard in a small saucepan. Simmer over medium heat until the mixture reduces by half and becomes syrupy.
  6. Remove the meatloaf from the oven, pour the balsamic glaze evenly over the top, and return to the oven for an additional 5 minutes to set the glaze.
  7. Allow to rest for a few minutes before slicing. Serve with your favorite sides for a complete meal.
