- 1 lb ground turkey or lean beef
- 1 cup finely chopped spinach or kale
- 1 cup grated carrots
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs (use gluten-free if desired)

- 1 tsp dried thyme
- 1 tsp paprika
- Salt and pepper to taste
- For the balsamic glaze:
- 1/2 cup balsamic vinegar
- 2 tbsp honey or maple syrup
- 1 tsp Dijon mustard
Instructions
- In a large mixing bowl, combine the finely chopped spinach, grated carrots, diced onion, and minced garlic to create the vegetable mixture.
- Add the ground turkey or lean beef, breadcrumbs, eggs, dried thyme, paprika, salt, and pepper. Mix thoroughly until well combined.
- Shape the mixture into a loaf shape and place it on a baking sheet lined with parchment paper or into a loaf pan.
- Bake in preheated oven at 375°F (190°C) for 45-50 minutes until cooked through and golden on top.
- While the meatloaf is baking, prepare the balsamic glaze by combining balsamic vinegar, honey, and Dijon mustard in a small saucepan. Simmer over medium heat until the mixture reduces by half and becomes syrupy.
- Remove the meatloaf from the oven, pour the balsamic glaze evenly over the top, and return to the oven for an additional 5 minutes to set the glaze.
- Allow to rest for a few minutes before slicing. Serve with your favorite sides for a complete meal.
