- 4 large black prince tomatoes, fresh and ripe

Instructions
- Wash the black prince tomatoes thoroughly under running water, then pat them dry.
- Slice the black prince tomatoes into thick rounds and set aside.
- In a large pot, heat olive oil over medium heat. Add chopped onions and minced garlic; sauté until translucent.
- Add sliced black prince tomatoes and diced bell pepper. Season with salt and pepper and cook for 10-15 minutes until the tomatoes break down.
- Drizzle with balsamic vinegar if desired, and stir gently to combine all ingredients.
Notes
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- To reheat, cook on low heat, stirring occasionally.
