Instructions
- Preheat your oven to 400°F (200°C). Grease a 9-inch cast-iron skillet or baking dish.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In a separate bowl, beat the eggs, then add buttermilk and melted butter. Whisk until smooth.
- Gradually fold the wet mixture into the dry ingredients until just combined.
- Pour the batter into the prepared skillet or baking dish, smoothing the top.
- Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

- For extra flavor, add honey, chopped jalapenos, or shredded cheese into the batter.
- Use fresh ingredients, especially baking powder, for best rise.
