- 2 medium zucchini, cut into fries
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Olive oil cooking spray
Instructions
- Wash and dry the zucchini. Trim off the ends and cut each zucchini into fries, about 1/2 inch thick.
- Set up the breading station: place flour in the first dish, beaten eggs in the second, and mix panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper in the third.
- Dip each zucchini fry into flour, then into eggs, and finally coat with the breadcrumb mixture.
- Preheat oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper, arrange fries in a single layer, and spray lightly with olive oil. Bake for 20-25 minutes, flipping halfway, until golden brown and crispy.
Notes
- Donβt overcrowd the baking sheet for even baking.
- Use panko breadcrumbs for a lighter, crispier texture.
- Pat the zucchini dry before breading to help the breadcrumbs adhere.
- Flip fries halfway through baking for even browning.
