Ingredients

  • 2 medium zucchini, cut into fries
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil cooking spray

Instructions

  1. Wash and dry the zucchini. Trim off the ends and cut each zucchini into fries, about 1/2 inch thick.
  2. Set up the breading station: place flour in the first dish, beaten eggs in the second, and mix panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper in the third.
  3. Dip each zucchini fry into flour, then into eggs, and finally coat with the breadcrumb mixture.
  4. Preheat oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper, arrange fries in a single layer, and spray lightly with olive oil. Bake for 20-25 minutes, flipping halfway, until golden brown and crispy.

Notes

  • Don’t overcrowd the baking sheet for even baking.
  • Use panko breadcrumbs for a lighter, crispier texture.
