  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 2 large sweet potatoes, peeled and sliced into 1/4-inch rounds
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1/2 cup salsa
  • 1/4 cup sour cream or Greek yogurt, for topping
  • 1/4 cup chopped cilantro, for garnish
  • Optional toppings: diced avocado, jalapeños, corn

Instructions

  1. Preheat your oven to 400°F (200°C). In a large bowl, toss sliced sweet potatoes with olive oil, chili powder, cumin, and salt until evenly coated.
  2. Arrange seasoned sweet potato slices on a baking sheet and bake for 20-25 minutes, flipping halfway through, until tender and slightly browned.
  3. Remove baking sheet from the oven and sprinkle shredded cheese evenly over the sweet potato rounds followed by black beans and any other desired toppings.
  4. Return the baking sheet to the oven and bake for another 5-7 minutes, or until cheese is melted and bubbly.

Notes

  • For extra flavor, add smoked paprika or cayenne pepper before baking.
  • Customize toppings with ground beef, shredded chicken, or pulled pork for a heartier meal.
  • Try different cheeses, like pepper jack or cotija, for a unique twist.
  • Add guacamole for creaminess and healthy fats.
  • Make it vegan with dairy-free cheese and sour cream alternatives.
