Ingredients

  • 1 lb dried red beans
  • 1 lb smoked sausage, sliced
  • 1 large onion, chopped
  • 1 bell pepper, chopped
  • 3 celery stalks, sliced
  • 3 garlic cloves, minced
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 4 cups cooked white rice
  • Chopped green onions for garnish

Instructions

  1. Soak the red beans overnight then drain and rinse.
  2. In a large pot, cook sausage slices until browned, then set aside.
  3. In the same pot, sauté onions, bell pepper, celery, and garlic until fragrant and tender.
  4. Add soaked beans, spices, bay leaves, cooked sausage, and 6 cups water. Bring to a boil.
  5. Lower heat and simmer uncovered for 1.5 to 2 hours until beans are tender, stirring occasionally.
  6. Remove bay leaves, season with salt and pepper, and serve over cooked rice garnished with green onions.
