- 1 lb dried red beans
- 1 lb smoked sausage, sliced
- 1 large onion, chopped
- 1 bell pepper, chopped
- 3 celery stalks, sliced
- 3 garlic cloves, minced
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1 tsp dried thyme
- 2 bay leaves
- Salt and pepper to taste
- 4 cups cooked white rice
- Chopped green onions for garnish
Instructions
- Soak the red beans overnight then drain and rinse.
- In a large pot, cook sausage slices until browned, then set aside.
- In the same pot, sauté onions, bell pepper, celery, and garlic until fragrant and tender.
- Add soaked beans, spices, bay leaves, cooked sausage, and 6 cups water. Bring to a boil.
- Lower heat and simmer uncovered for 1.5 to 2 hours until beans are tender, stirring occasionally.
- Remove bay leaves, season with salt and pepper, and serve over cooked rice garnished with green onions.
Notes
- Soaking beans reduces cooking time and improves digestion.
- You can substitute smoked sausage with turkey sausage for a healthier option.
- This dish tastes even better when reheated the next day.
