Ingredients

  • 2 lbs beef stew meat, cubed
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons paprika
  • 1 teaspoon caraway seeds
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 bell pepper, chopped
  • 4 cups beef broth
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Brown the beef cubes until well-seared, then remove and set aside.
  3. Add chopped onion and garlic to the pot; sauté until translucent.
  4. Stir in paprika and caraway seeds, cook for 1 minute.
  5. Return beef to the pot, add carrots, potatoes, bell pepper, and beef broth.
  6. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until beef is tender.
  7. Season with salt and pepper to taste, serve hot with crusty bread.
