- 2 lbs beef stew meat, cubed
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons paprika
- 1 teaspoon caraway seeds
- 2 carrots, sliced
- 2 potatoes, diced
- 1 bell pepper, chopped
- 4 cups beef broth
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Brown the beef cubes until well-seared, then remove and set aside.
- Add chopped onion and garlic to the pot; sauté until translucent.
- Stir in paprika and caraway seeds, cook for 1 minute.
- Return beef to the pot, add carrots, potatoes, bell pepper, and beef broth.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until beef is tender.
- Season with salt and pepper to taste, serve hot with crusty bread.
Notes
- For extra flavor, add a splash of red wine during simmering.
- Can be made ahead and reheated for better flavor.
