Instructions
- Wash the kale, remove tough stems, and chop into bite-sized pieces. Massage with olive oil for tenderness.
- Core and chop the apples into small pieces.
- In a small bowl, whisk together olive oil, apple cider vinegar, honey (or maple syrup), Dijon mustard, salt, and pepper for the dressing.
- In a large bowl, combine kale, chopped apples, dried cranberries, and nuts. Pour dressing over the salad and toss well to coat. Serve immediately or chill.
