Instructions

  1. In a mixing bowl, combine sliced apples with granulated sugar, ground cinnamon, ground nutmeg, and lemon juice. Toss to evenly coat the apple slices. Set aside.
  2. In a large bowl, whisk together all-purpose flour and salt. Add cold, cubed butter and use a pastry cutter or fingers to blend until the mixture resembles coarse crumbs. Stir in powdered sugar and vanilla extract. Press two-thirds of the mixture into the bottom of a greased baking pan to form a crust.
  3. Spoon the apple filling evenly over the prepared crust. Sprinkle the remaining shortbread mixture over the apples, pressing gently to create a crispy topping.
  4. Preheat oven to 350°F (175°C). Bake for 40-45 minutes, or until the top is golden brown and apples are tender. Let cool completely before slicing into bars.
