Instructions

- In a separate bowl, whisk melted butter, eggs, vanilla extract, and sour cream until smooth.
- Gently fold wet ingredients into dry ingredients. Add chopped apples and mix until just combined.
- Divide batter evenly among muffin cups, filling each about 2/3 full.
- Bake for 20-25 minutes until a toothpick inserted comes out clean. Cool in the pan for 5 minutes, then transfer to wire rack.
