- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened

- 1 teaspoon vanilla extract
- 3/4 cup apple cider (preferably fresh)
- 1 jar caramel sauce (for the caramel filling)
- Optional: caramel chunks or toasted pecans for added texture
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper to prevent sticking.
- Combine dry ingredients by whisking together the flour, baking soda, cinnamon, nutmeg, and salt in a large bowl.
- Cream the butter and sugar in a separate large bowl until light and fluffy.
- Add the egg and vanilla to the butter-sugar mixture, mixing well to combine.
- Gradually pour in the apple cider, mixing continuously until your batter reaches a smooth consistency.
- Stir in dry ingredients until just combined to keep the batter light.
- Scoop the batter onto prepared baking sheets using a tablespoon or cookie scoop, spacing evenly.
- Bake in the preheated oven for 12-15 minutes or until edges are golden brown.
- Cool the cookies on a wire rack for at least 10 minutes.
- Prepare the caramel filling by softening or gently heating caramel sauce, and optionally folding in caramel chunks or toasted pecans.
- Assemble the whoopie pies by spreading caramel filling on the flat side of one cookie, then topping with a second cookie to form a sandwich.
- Repeat with remaining cookies and caramel filling. Optional: roll edges in crushed nuts or sprinkles.
Notes
- Prepare the cookies a day in advance and store in an airtight container at room temperature or in the fridge for up to 3 days.
- Assemble the cookies just before serving to keep the filling fresh.
- You can freeze assembled whoopie pies for up to 2 months.
