Ingredients
Scale
- 2 frozen banquet pot pies (or your preferred brand)
- 1 cup diced mixed vegetables (carrots, peas, and corn)
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 egg (for egg wash)
Instructions
- Cook diced vegetables in a pan with olive oil until tender. Season with salt and pepper.
- Assemble the pot pie by placing one crust in the air fryer, adding the vegetable filling, and topping with the second crust. Brush with egg wash.
- Preheat the air fryer to 375°F (190°C). Cook the assembled pot pie for 15-20 minutes until the crust is golden brown.
- Carefully remove from the air fryer, let cool for a few minutes, slice, and serve garnished with herbs.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat in the air fryer for a few minutes before serving to retain the crust’s crispiness.
- This pot pie pairs well with a fresh salad or steamed vegetables.
- Feel free to use different fillings or homemade crust for a personal touch.
