Instructions
- Start by seasoning the chicken breasts with smoked paprika, cumin, garlic powder, salt, and pepper. Heat the olive oil in a skillet over medium heat. When hot, add the chicken breasts and cook for 6-7 minutes on each side until fully cooked and golden brown. Let the chicken rest for 5 minutes before slicing into thin strips.
- While the chicken is resting, warm the tortillas in a dry skillet or microwave until soft. Prepare the toppings: halve the cherry tomatoes, thinly slice the red onion, crumble the feta cheese, and chop fresh parsley or cilantro.
- Lay a warm tortilla on a plate. Spread a spoonful of Greek yogurt or tzatziki sauce over it. Top with sliced chicken, then add cherry tomatoes, red onions, and feta cheese. Garnish with fresh herbs and optional sliced olives or cucumbers. Serve immediately for optimal flavor and texture.
